Ray Zillman from the Mackay Branch shares his prize winning recipe for Granadilla Tart
Ingredients - Pastry Base
90g margarine
1 egg yolk
1 ½ cups plain flour
2 T/S sugar
2 T/S milk
½ cup SR flour
Method
Cream margarine & sugar then beat in egg yolk. Mix in flour and knead into a ball. Press into a pie plate and bake in a hot oven (200°) for 15 minutes.
Ingredients - Filling
Granadilla
2 T/S cornflour blended with lemon juice
whipped cream for topping
2 T/S sugar
Method
Peel & chop granadilla into small cubes. Put granadilla, seeds & sugar into a saucepan and heat then thicken with cornflour & lemon juice. Cool, place in pastry shell then decorate with whipped cream.
