Frozen Breadfruit can be used in exactly the same way as fresh breadfruit, so this recipe can be used all year from breadfruit put down in the freezer.This is the recipe used by Cape Trib Exotic Fruit Farm every day in their fruit tastings, and is very popular.
Ingredients
1 hard mature breadfruit.
1 Tablespoon cooking oil
1 teaspoon cajun spice
salt
Instructions
Use hard mature fruit. Peel and quarter the breadfruit, and remove the core. Wash the pieces in water to remove some of the starch. Slice into chips around 1/2 to 1 cm thick.
Place in a bowl with 1 tablespoon of cooking oil and 1 teaspoon of cajun spice. Toss to cover all chips and spread into a flat baking tray.
Bake in the oven for 1 hour at 220C, turning about half way through. Cooked chips should be soft inside with a slight crust.
Sprinkle with salt to serve.
